History
Our Founding Story
The company was founded in 1999. In the same year, we established the Kikuka Town Grape Growers’ Association as a contract cultivation organization and planted the wine grape varieties Chardonnay and Cabernet Sauvignon. We started with three contract growers who had no prior experience in grape cultivation, and together we progressed step by step. At that time, grapes had never been grown in the region, so there were considerable challenges. In the fourth year after planting, when the vines yielded fully mature grapes, we conducted what was then Japan’s first-ever night harvest. The key objective of night harvesting is to transport grapes from the vineyard without damaging them in warm climates. Therefore harvesting during the cooler hours, when temperatures drop, is ideal. As an added benefit, night-time is also when the grapes’ aromatic compounds are at their peak. The following year, Kikuka Night Harvest Chardonnay 2003 won a gold award at a domestic wine competition, and this achievement gave us confidence in the terroir we had envisioned. Since then, we have expanded our vineyard acreage, establishing the area as a wine-producing region. Today, we manage our own vineyards and devote ourselves to improving production techniques and quality together with the growers of the Kikuka Town Grape Production Promotion Association.

Viticulture
Kikuka Town, Yamaga City, where our grapes are grown, is located at the northern edge of Kumamoto Prefecture. The town borders Fukuoka and Oita Prefectures and lies in a mountainous region surrounded by peaks such as Mt. Happo, Mt. Mikuni, and Mt. Kunimi, all rising to approximately 1,000 meters above sea level. The vineyards cultivated under contract by members of the Kikuka Town Grape Production Promotion Association cover a total of approximately 7.5 hectares and are scattered across about 30 locations throughout the town. Their elevation ranges from 100 to 200 meters. The region is blessed with more than 2,000 hours of sunshine annually. During the grape growing and ripening season (from May to September), sunshine totals approximately 1,100 hours, making the area a highly favorable environment for viticulture. On the other hand, rainfall exceeds 1,700–2,000 mm annually. To protect the grapes from diseases, all vineyards are equipped with rain shelters. An additional benefit of these shelters is that they reduce the frequency of pesticide applications, enabling lower-chemical cultivation. Yamaga City also has around 80 natural springs. In Kikuka Town, where the vineyards are located, the water temperature is approximately 14°C, compared with 16–19°C in other regions. This water helps cool the soil and is thought to contribute to the diurnal temperature variation. It is no surprise, then, that Kikuka Town produces high‑quality grapes. The soils of Kikuka Town consist of light-colored Andosols (volcanic ash soils), brown lowland soils, brown forest soils, lowland paddy soils, and gray lowland soils, and vineyard parcels are selected accordingly. In vineyard management, we enhance vine growth through proper pruning and manage fruit health and development by performing early leaf thinning from the flowering stage onward. This canopy management, combined with the local climate (microclimate) and soil characteristics, contributes to the formation of the Kikuka terroir. Grapes grown with the utmost care are harvested entirely by hand, with each cluster carefully sorted during picking. Our ultimate goal is to harvest “healthy fruit” to produce wholesome wine.

Winemaking
The flavor of wines differs greatly depending on regional characteristics, (including the climate, geology, and soil of each vineyard block, as well as the grape variety and level of ripeness). In the winemaking process, the degree of grape pressing and fermentation temperature also influence the final flavor of the wine. Additionally, factors such as yeast selection help shape the style of the wine. When barrels are used, the origin of the wood becomes an important factor as well. To bring out the grapes’ condensed fruitiness and refined potential to their very best, winemakers let their imagination run wild and explore various possibilities.
