In Europe, hams, sausages, pâtés, and other cured meats have been developed and refined over centuries. These products were originally created to enhance the preservation of meat through salting, drying, smoking, and other methods. Their history dates back to ancient Greece. They are called “charcuterie” in France, while in Italy they are known as “salumi.” Today, they are gaining attention as an "everyday food," appreciated for their unique flavors rather than being seen as preserved meats. At Kikuka Winery, we craft charcuterie that highlights the flavors of ingredients sourced from Kumamoto Prefecture, including Yamaga, while honoring traditional European methods. It is said that 80–90% of the quality of charcuterie depends on its ingredients. For this reason, we always visit producers in person to inspect and taste their ingredients, selecting only those we approve. Bringing out the full potential of ingredients is part of the craft. Since meat is a natural product, each charcuterie turns out a little differently, even with the same recipe. It's part of what makes charcuterie so complex.
